SABATIER knife was born at the beginning of the 19th century. It is
a professional knife for cooks and butchers and actually bears the
name of a family from Thiers. But which family? The family of Jean
SABATIER from Le Moûtier or of Philippe SABATIER from Bellevue?
This was a time well before the first French legislation concerning
intellectual property rights. In those days registration of the
brand name SABATIER had to be accompanied by a word or traditional
image. This then was the somewhat hazy legal context in which
several companies registered the SABATIER brand in
France.
In 1979 the various
holders of the SABATIER brand decided to come together in an
association to defend the brand name. The name SABATIER today is a
victim of its fame and complicated history. The name alone can no
longer convey all the values that have made it a great brand. The
result is that care must be taken when selecting a `brand’ of
Sabatier.
Maitre de Cuisine fully
