
Tojiro Senkou
Celebrity Chef Heston Blumenthal, owner of the 3-Michelin Star Fat Duck restaurant in Bray is officially endorsing the Tojiro Senko knife range. The Fat Duck was also voted 'The Best Restaurant in the World' in 2006. Senkou is the Japanese for "Flash of Light and Inspiration". Made by folding and hammering multi layers of steel to produce the floating mist Damascus-type blades, first seen in Syria about 400AD and then adopted by Japanese Samurai sword smiths. This process of laminating different types of steel means the cutting edge can be extremely sharp but the blade retains flexibility and strength. The Senkou range start with the smaller knives having 37 layers of steel up to 63 layers in the bigger knives. The handles are made from Micarta (multi layers of linen and resin) and have a stainless steel inlay, which can be engraved. These knives, as all top of the range knives, should never be put through a dishwasher and should ideally be washed and dried as soon as they are finished with.
