Global knives are unique in the world of fine cutlery, first designed in 1986 by Komin Yamada whose task was to develop a range of knives which was truly new and revolutionary by harnessing the best materials available and the most modern design concepts. With an almost unlimited budget he was to fashion a series of kitchen knives which would appeal to the professional and amateur chef alike, be comfortable and easy to handle, and meet their most demanding requirements. Razor sharp and exceptionally light, the blades utilize Molybdenum/vanadium stainless steel, ice tempered and hardened to Rockwell C56-58. The steel used is harder than in traditional German cutlery, which gives Global knives a noticeably sharper edge and the Global edge is truly its signature. The majority of Global knives are sharpened or ground straight to a point rather than bevelled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more onto the blade of the knife. Global's thin blades also make Global significantly lighter than other knives, and this lightness, combined with their superb balance, make them easy to control and a joy to use.
